LAND AND CLIMATE
Siliceous soil of schistous origin, stonier on the slopes, more sandy in the depressions.
Climate: it is influenced by the sea. Hyères harbour is only a few kilometers away

THE VINEYARD
Most of it is sloping with vines on trellis.
average vine age: 20 years.
Grape varieties for this wine: 100% Rolle.

THE WINE MAKING
Grape harvest is entirely by hand with on site grape sorting,
Stalk stripping and inerting of musts is immediate upon entrance of the grapes into the cellar,
Pressing is performed after a short maceration.
Temperature control is effective at all stages with fermentation at a fixed 17°C.

PRODUCT CHARACTERISTICS
Alcoholic strength: 12,1 % vol.
Bottled in bordeaux-type Prestige 75 cl, DELTA cork 44 x 24 with Mise en Bouteille
à la Propriété marking, own label, capsule congé.

TASTING AND FOOD MATCHING
Pale yellow hue with green glints. The nose is a bunch of white flowers with cool pear notes.
The gourmet mouth is silky. The final aromas yield a full freshness.

All fishes, shell fish and crustaceans: Bouillabaisse, bourride, pike quenelles à la Nantua,
sole filets and scallops with beurre blanc. Duck and goose Foie Gras. White meats.
